Pulled Pork Tacos
Turning a pork shoulder into a tasty meal is worth the wait.
I quartered the pork shoulder to brown each side. Browning is always worth the wait.   I then removed the quarters and browned the onions and bell peppers, adding some Tony‘s to the hot pork and the vegetables.
Once the onions and peppers were soft and brown, I added a can of Rotel and two smoked turkey necks.
All of these cooked ingredients went into the crock pot with vegetable stock, fresh oregano, and Tex-Mex seasoning (cumin, chili powder, garlic powder, chipotle powder, pepper and salt. It cooked for about 6 hours in low.
After cooling over night, I dumped the pork into a bowl and pulled about. I was careful to remove and chunks of fat. It wasn’t hard to find because of the texture. Everything went back into the crock pot to reheat and serve.
